Best Scone Recipes
The best scone recipes will, in part, depend on your personal preference. Do you like a plain scone smothered with clotted cream and your favorite preserve? Or a scone made with raisins, currants, cranberries, or blueberries? Perhaps you prefer a cheese scone, one with nuts, or a chocolate chip scone. You can use different flours with your scones including white, whole wheat, oat flour, or cornmeal. Variations abound, so part of your search for the best scone recipes will be determined by what tastes good to you! The other part in finding the best scone recipes is finding what it takes to make the very best scone dough and bake it to perfection. This can be debatable as well but there are a few tips you might consider:
- Do NOT over mix your dough. The best scone recipes are those that you get your hands into. You have more control over the mixing. Yet, if you want to use a food processor (as some recipes suggest), an electric mixer, a pastry blender, or knives to create your dough, feel free. Just remember to not over work the dough.
- Use COLD butter. You don't want it to "melt" into your dry ingredients and create a smooth dough. You want something more "crumbly".
- As additional ingredients are added, mix the dough only to the point that all the ingredients have combined.
- It's okay to experiment with the type of fresh or dried fruit you like as well as chocolate chips, nuts, zests, cheeses, and spices.
- Once you have kneaded and shaped your dough into a circle, you can cut it into wedges or use a cookie cutter or the top of a glass for round scones.
- Line your baking sheet with parchment paper to avoid over browning of the scone bottoms.
- Placing your scones on the baking sheet so that they touch will give you a golden brown top and soft side. Placing them an inch or two apart will brown the sides as well.
- Before baking, you may desire to brush the top of your scones with a wash of reserved egg white, egg mixed with milk or water, buttermilk, or cream.
Fresh out of the oven, you can cool the scones either covered with a towel for a softer crust or uncovered for a crispier crust. The best scone recipes are those in which you serve the scones warm, either as is or with butter, a delicious fruit preserve/jam, and clotted cream. Or, try a creamy lemon curd. And of course, your favorite cup of tea!
