Tea Breads and Muffin Recipes

These tea breads and muffin recipes are easy to prepare and soooo tasty! They are great just by themselves and a nice steaming cup of your favorite tea. Or, they make a great addition to that Afternoon tea when serving desserts and tea sandwiches.

Often referred to as quick breads, they can be sweet or savory. Fruits, vegetables and nuts are common ingredients.

And, you don’t use yeast as a leavening agent so you don’t have to wait for the dough or batter to rise. Baking powder and/or baking soda is used instead.

Tips on making quick breads:

  • Grate, mash, or chop your fruits, vegetables, and/or nuts before making your batter. The baking soda or baking powder may lose some of its leavening power the longer the batter sits.
  • Do not beat the wet and dry ingredients. Simply mix until the dry ingredients are moistened. The more you mix, the tougher the bread will be.
  • If your recipe calls for all-purpose flour, do not substitute it with self-rising or cake flour. This would require you to know how much to reduce the amount of baking soda or baking powder.
  • Take caution in adding more fruits and vegetables than the recipe calls for. You may end up with a damp loaf that does not cook completely through.
  • If your bread begins to brown too quickly, you can cover it with aluminum foil. (It is not unusual for the bread to crack on top.)
  • Once removed from the oven, leave the bread in the pan for 10 minutes, then remove and cool completely before slicing.
  • Most quick breads freeze well up to a month. If frozen, thaw and reheat in 375-400 degree F oven for a few minutes.
